We had to pair our decadent cakes with their cookies!
How #lush does this Simply Mix layered cake look?!
Well great news, you can make it too in your kitchen in less than 3 minutes!!
Check out our recipe below.
To make this Simply Mix layered cake you will need:
- 1x pack of Brownie Cake In A Mug mix
- 1 pack @rhythm108 Double Chocolate Hazelnut cookies
- your favorite mug
- 50g vegan butter
- 1 cup @sumawholefoods organic icing sugar
- 1 tsp vanilla extract
Bake your Brownie #cakeinamug in your microwave for 1:40mins or in the oven at 180° for 25-30 mins.
While your cake cools down start preparing your #vegabuttercream using either a professional countertop mixer or a stand mixer. Whatever works best for you.
I personally prefer to use the countertop type, this way I only have to add the ingredients and the machine does the rest.
Once your buttercream is ready, grab a bakery palette or a kitchen knife and gently slide it around the edges of your mug so that the sponge starts loosening.
Flip your mug upside down on a plate and lift to extract your mini sponge cake.
Now cut your cake in the middle and set aside.
Transfer your buttercream into a piping bag and start piping your first layer, add pieces of @rhythm108 chocolate hazelnut cookies and add a bit more buttercream so that the top layer of your cake will be held in place.
Now that your #minicake is assembled feel free to add a few more dabs of buttercream here and there with extra bits of cookies to make it more indulgent.
Place on a fancy plate and voilà! Your cake should look more or less like ours pictured up.
