To make this Simply Mix layered cake you will need:
- 1x pack of Brownie Cake In A Mug mix
- 1 pack @rhythm108 Double Chocolate Hazelnut cookies
- 2 small ramekins
- 50g vegan butter
- 1 cup @sumawholefoods organic icing sugar
- 1 tsp vanilla extract
TWO STEP METHOD
Whisk together your Brownie #cakeinamug mix and separate the batter in two small ramekins.
Bake in the microwave for 1:40mins or in the oven at 180° for 25-30 mins.
Let your cakes cool down and start preparing your #vegabuttercream using either a professional countertop mixer or a stand mixer.
Whatever works best for you.
I personally prefer to use the countertop type, this way I only have to add the ingredients and the machine does the rest.
Once your buttercream is ready, grab a bakery palette or a kitchen knife and gently slide it around the edges of your ramekins so that the cake sponges loosen.
Flip upside down on a plate and lift to extract your mini #brownie cakes.
Transfer your buttercream into a piping bag and start piping your first layer, add pieces of @rhythm108 chocolate hazelnut cookies and add a bit more buttercream so that the top layer of your cake will hold in place.
Now that your #minicake is assembled feel free to add a few more dabs of buttercream here and there with extra bits of cookies to make it more indulgent.
